A Christmas Log Recipe


It’s been a while since I posted a recipe, so it’s good to be back! Every time I do a recipe I always say that it’s one of the easiest things you will ever do but this time I am dead serious. This is the easiest thing YOU WILL EVER DO.


What you will need:

500mL thickened cream
250g packet of Choc Ripple biscuits (Arnotts)
Cocoa Powder
White Sugar
Vanilla Extract
Various toppings (I used a Flake and rainbow chocolate drops)


Put the cream in a large bowl, with about a tablespoon of sugar and a capful of vanilla extract (really just do it to taste, there is no exact measurement) and use electric beaters to whip it up nice and thick.

Add in a spoonful of cocoa powder and just stir it in slowly.


Put a large dollop of the cream mixture onto a long plate and then line up the biscuits (standing on their sides) one by one, using the cream as glue.


Once all your biscuits are standing up nicely, cover the entire log in the rest of the cream mixture. You have to be very generous because there is A LOT of cream in this recipe. Once it’s all completely covered, sprinkle your topping of choice on top. Put the log in the fridge for about 6 hours. Don’t serve it straight up because the cream needs time to seep into the biscuits.


The end result is almost like a cake and it’s very Christmassy!  It’s so easy to make when you realise you’ve only got a few hours until a party and you haven’t made a single thing. Also, no-bake recipes are my favourite thing ever.
